salted brown butter crispy treats



I know very few people who aren't fans of a rice crispy treat - am I right? Add salt and butter to, well, anything, even cardboard, and I'll eat it. Did I mention yet that there are only four ingredients? And that they are oh so delicious?! I found this recipe, and knew my inner child would never forgive me if I didn't make a batch, like, immediately.

Salted Brown Butter Crispy Treats

4 oz. (or 1 stick) unsalted butter, plus extra for the pan
1 10-oz. bag marshmallows
1/4 tsp. coarse sea salt {overflowing}
6 cups Rice Krispys cereal {about half of a 12 oz box}

1. Butter an 8-inch square cake pan, with two inch sides.

2. In a large pot, melt butter over medium-low heat. It will melt, then foam, then turn clear golden and finally start to turn brown and smell nutty. Stir frequently, scraping up any bits from the bottom as you do. Don’t take your eyes off the pot as while you may be impatient for it to start browning, the period between the time the butter begins to take on color and the point where it burns is often less than a minute.

3. As soon as the butter takes on a nutty color, turn the heat off and stir in the marshmallows. The residual heat from the melted butter should be enough to melt them, but if it is not, turn it back on low until the marshmallows are smooth.


4. Remove the pot from the stove and stir in the salt and cereal together. Quickly spread into prepared pan. I used a piece of parchment paper covered with a little bit of butter to flatten the surface of the treats.

5. Let cool and then cut into squares. Serve and enjoy!


Makes 16 2-inch squares

  1. I'm actually not usually a fan of rice crispy treats--but I had a batch gifted to me recently at work that definitely changed my mind. I've been wanting to try them at home--can't wait to use your recipe!

  3. oh god, my diet just broke. there's no way i cant eat that when i go home today. no way. and i laughed at your "add salt and butter to anything, even cardboard, and ill eat it"- haha so true!!
