the prettiest appetizer ever

The title says it all - this appetizer is pretty. Like do a double take, whistle-as-it-walks-by pretty. And it's good, too. They're sparkling cranberry brie bites. And they're easy as pie to make.

Here's what you'll need:

           2 cups fresh cranberries
           1 cup good maple syrup
           1 cup granulated sugar
           1 box of your favorite plain crackers
           8 oz brie cheese
           cranberry chutney or cranberry relish
           1 sprig of mint to garnish

Rinse cranberries and place in a medium bowl.

Warm up maple syrup in a small sauce pan just until warm {if it's too hot, it will pop cranberries, which does not equal pretty} Pour over cranberries while syrup is still warm. Cool, cover, and let soak in the refrigerator over night.

Drain cranberries in a colander. Place sugar in a large bowl or baking dish {or whatever you have on hand, which in my case was beautiful plastic tupperware}. Add cranberries in 2 batches and roll around until lightly coated in sugar.

Assemble with 1 slice of brie cheese, a tsp of cranberry relish, and a sparkling cranberry or two. Top off with a fresh sprig of mint, if you fancy mint. And voila!
